I acquired a great pair of Sonos Play: 3 speakers with the Bridge when my office decided to eliminate them from our network setup. I have them playing in my bedroom on the house network and can access them with both S1/S2 apps and with the Spotify app itself, as well as controlling the volume seamlessly using Google Assistant (volume to xx%). I would like to be able to run my computer gaming sounds through them, and movies from my smart TV as well without having to add additional hardware to my network.Will I need to run it all through the Bridge unit, or can I keep them connected wirelessly? Or is that not going to work at all?

Not going to work at all. Both the BRIDGE and the PLAY:3 don’t have a line in to take input from your TV in any way. You’d need to add a Sonos with some sort of line in to the mix, which you’ve expressly said you don’t want to do.
For what it is worth, I wouldn’t use the BRIDGE at this point, given the issues it has (eventually) with the power supply. I’d hang the PLAY:3s off my WiFi, or SonosNet. As I have done with my PLAY:3s.
