I have one Sonos One SL, and one Sonos One speaker. I recently got a bluetooth enabled turntable. Clearly, I would love to use these speakers but they are wifi speakers and not compatible with the turntable. 

I am looking at the Roam SL. I do see it is bluetooth compatible. I do see I can group it with my other speakers. I understand they would all have to be on the same wifi. But would the Roam SL allow my One SL speakers to play the bluetooth from my turntable? 

All you would need to do is group the Roam SL with the room(s) that contain the Sonos Ones, and all would play the Bluetooth input.
