On the product page you linked, I see no sign of a second HDMI input. If there definitely is one, and it is HDMI-ARC, you can connect the Sonos Amp directly to it - no need for the splitter.
If, however, the 2nd HDMI port does not deliver ARC, then you would need to put the splitter between the Firestick and the Projector.
Please be aware that ceiling speakers are not recommended for Home Theatre front speakers - you’d get better results with horizontal-facing speakers.

Glad I made sense, you have the gist of what I mean.
On the Epson Projector the firestick is hidden inside the little rear access door, with its own HDMI, so the one you see is the extra.
Unfortunately, I know it isn't ARC.
Ok, so the splitter between the Epson and the firestick, with the optical cable/HDMI off to the Amp.

Thanks for the advice on the ceiling speakers. I realize they arn’t recommended to be the only home theater sound. This set up is primarily for music, with an eye to the future. This is the start of my Sonos journey, and i’m just playing with whats possible.
Yes, that unit extracts ARC audio and outputs via normal HDMI. You want to extract normal HDMI audio and output it via ARC.

While @jgatie is correct in saying that the Amp would need a HDMI-ARC feed to play, that’s only when HDMI is in use. If you use the Sonos Optical Audio Adapter that is not supplied with the Amp, you could connect the Amp to the optical output of either of the splitters you linked to, as long the splitter operates within S/PDIF specifications.

Ah, you’re saying this because i’m only interested in the audio side of the feed, not the video?

Well, the Amp is only interested in the audio, yes. The video will pass through the splitter and go to the projector.
On HDMI, the ARC signal is carried on a different wire than the source’s audio. A TV would normally transfer the signal to that other wire for an audio device. As that isn’t done by the projector, we’re using the combination of the splitter and converter to get the signal onto the correct wire in the Amp’s HDMI input.
