I am looking to install a full sonos system for the home - Here is the layout:
Garden Level: large open TV room with large bar area 600sqft
1st Level: open concept kitchen/dining room 600sqft - Also additional TV room 350 sqft
2nd Level: Master bedroom/bathroom with tv

At this stage your brief is far too vague to start throwing around definitive solutions. You should probably have a think about defining your needs, your priorities and and your expectations. You might also want to think about budgets. I realise this is a chicken and egg question, but if you have some rough expectations then at least that's a start.
You can go entirely Sonos with products such as Playbar, Sub, Play Ones for the TV rooms, then standalone speakers for other areas. Or you could mix Sonos with 3rd party products such as in-ceiling speakers or even full Dolby Atmos/DTX surround systems.

- Playbar/Playbase, Sub, 2x Play One
- Conventional AV Receiver + 5.1/7.1 speaker system + option of Atmos/DTX in-ceiling speakers + add-on Sonos Connect streaming player
Open plan areas:
Question - Do you want multiple zones i.e. kitchen + dining area + seating area (3 zones) or do you want to run the whole area as one?
- Consider the Play One/3/5 speakers with or without a sub
