If eARC is on HDMI 3, then that is where Beam 2 must be connected to the TV - only audio devices care about the HDMI port they are plugged into, so the Sky Q box should plug into any other HDMI socket (unless there are a limited number of HDMI sockets that support 4K, in which case you should plug it into one of those. I assume HDMI 1 would be one of these, however).
I would hope that your TV would then figure things out for itself, but if it does not, you would need to go to the TV’s audio settings and ensure that the connected eARC device (your Beam 2) is selected as the output device. For the digital audio output format (or similar wording), the Passthrough setting is usually best, though Bitstream, if available, may be another viable option. If you encounter any issues, however, please try Auto instead.
When Beam is set up, it takes you through a TV setup process - if you skipped this on first setup, you may have to perform it manually after connecting the Beam 2 to the TV. To do so, please open the Sonos app and select Settings icon (top right, gear/cog shaped) » groom with Beam] » TV Setup.
If you have a Sky router as well as a Sky Q box, please be aware that the Sky Q box will repeat your WiFi signal, but in a way similar to WiFi extenders that we do not support. Should you find yourself repeatedly unable to connect to your Beam 2 in the Sonos app, please try rebooting the Sky Q box by unplugging it for a moment - that will shift the Beam 2 over to the router's WiFi broadcast and it will remain there until either the router or Beam 2 is rebooted.

If your Sky Q boxes can be hooked up via ethernet then you can turn off their WiFi, although this periodically re-enables itself on some updates. This gets rid of another superfluous WiFi network if you aren’t using Sky broadband or don’t need them to act as WiFi mesh units. This is why they don’t play well with Sonos as they grab STP control but use the newer path costs that Sonos do not…
On the Sky Q mini, you may need to go into the audio settings to ensure it’s outputting bitstream rather than stereo PCM over HDMI. I think you can also adjust delay there too if required.
