Sonos Arc +One SL + Sub all Wired in ubiquiti network

Keep reading in that thread, there are certain setups that don't like being wired; specifically surrounds and Subs.

TL;DR - Don't wire the surrounds and Sub.  When not wired, they don't connect to the router, they connect directly to the soundbar via a special one way, low latency, 5 GHz link.  Wiring them makes them susceptible to the regular networking/router and all its foibles.

There is no way to "turn off Wi-Fi" despite what the toggle says. What that horribly named toggle does is turn off the radio. So yes, it "turns off" the Wi-Fi, in the same manner cutting off your finger fixes a torn fingernail.

You can "disable Sonosnet" that removes the 2.4 gHz network older Sonos create when wired, that makes networking simpler with no second wireless network and possible loops, and frees up the channel it uses for other use.

Wiring Sub and Surrounds is argued often, some prefer it for some reason, for some it disrupts the audio. Here with all wired I had problems, unwired there are no isssues. Giving up a 5 gHz channel for the connection isn't a problem given the number of available channels.

Ah i didn’t see any mention of surrounds. 

So basically that thread works for non home-theater surround setup? 

I ended up going full on wifi. When my Arc is connected via ethernet it creates sonosnet --I had to go full wifi to shut it off. 

You can now turn off SonosNet. Look in Settings → Network.

Yea that only works if it’s connected via wifi. If you have ethernet connection, the setting is greyed out for me. 

My ideal setup is to have a home theater setup where all 4 of my speakers (arc, sub, surroundings x2) are ethernet connected, but it seems like that isn’t possible? 

Are you using any Unifi switches? The Dream Machine does not support STP. The option that you see is a global option that can be used by wired external Unifi devices.

Not with a UDM. Use WiFi, it doesn't sound any better with Ethernet. You may get a nice warm feeling that your devices are wired, but there is no advantage in 99% use cases.
