I recently purchased an Epson LS800 projector and looking to pair it with the Sonos Arc Soundbar. What is the best way to connect it.

The Sonos Arc connects via HDMI-ARC or the Sonos optical adapter.
Is there one that is better than the other?
HDMI-ARC is better. That projector supports HDMI-ARC.

This projector supports ARC but if you want atmos and lpcm you need eArc extractor
Atmos can be carried across ARC, via Dolby Digital Plus. Uncompressed Atmos does require eARC, but in a Sonos system, there is no difference, since the extra data in the uncompressed signal represents speakers that can’t be reflected in a Sonos system.

most sources such as apple tv, pc, ps5 and xbox uses dolby mat which requires eArc to be used, Arc cant carry dolby mat

The vast majority of devices (Fire TV, Roku, Android TV, Nvidea Shield, Chromecast, all smart TV’s, etc.) use DD+, which is also the source for 95% of the streaming services out there (Prime, Discovery, Max, Netflix, Disney+, etc.). Apple TV+ is the only streaming service using Dolby MAT as a source, and even that is converted to DD+ for devices which use it.
