Since this still has not been enabled I assume sonos will not be doing this ?
Not a great look from Sonos, it works on other Google enabled speakers.

Will Sonos update this or do I have to change to Spotify which is a shame as apple music is far better and has Atmos

I thought Apple Music playback ‘initiation’ only worked on Google speakers… i didn’t think the licence agreement between Apple/Google extended to starting playback on third party speakers. You can still play Apple Music on Sonos and have Google assistant control what’s in the room queue eg. adjust volume, skip tracks etc. but cannot initiate playback?
Can I just kindly ask which other third-party speaker manufacturers allow this? Would this also not be for Apple/Google to resolve too?
