Why is Sonos ignoring YouTube music as my default music service when I am specifying it as my default?
It is not an acceptable service to default to Spotify when I have not chosen that as my default option.
I have seen other queries dismissed by saying Youtube is not supported but obviously it is supported as a service and I can select it as my preferred service?
So make it PREFERRED.

Your Preferred Service just determines which service goes in the first position of Your Services. A convenience. I don’t think it has any other significance.
The only notion of a ”Default” service that I can determine has to do with Sonos Voice Control.

When you speak directly to the Support staff, they have tools at their disposal that will allow them to give you advice specific to your network and Sonos system.
You definitely have an issue of some type. Can’t say it’s Sonos related as l can set YouTube music as default. See pic’s below. How are you trying to make it default? Maybe I’m not understanding your issue 🤔
