Why in the world was volume control removed from the iphone app???? This is very frustrating.

If you mean the hard button or lock screen volume controls, they’ve been gone for quite a while. Apple decided to enforce their draconian rules about controlling third party hardware, and told Sonos to stop using the hack they found to get around that rule or risk being banned from the app store.
So your complaint is with Apple.
