Hi, I’ve purchased a used Sonos 5. I have set an account on the Sonos website but, when I go into the app, it asks me to  sign in but gives me (I guess) part of the previous owners email address and, I cannot submit my own.

could you please advise of a solution to this issue?

Use the Transfer System Ownership option in the app to register the device against your own account.

Failing that, factory reset the device and setup following the prompts in the app to add a device.
