every time I change an lp on turntable I need to reselect what speakers are being used, change volume level and balance and stereo pair. How can I preset these? Or stop losing them when I flip the record on the turntable?

Do you have the Autoplay settings switched on in ‘Settings/System/[Sonos Device]’ within the Sonos App? See screenshot.
Also maybe set the Line-In ‘source level’ higher, perhaps to level 8 to 10.
