Normally you can unmute a muted single room and also a muted group of rooms by moving apps volume slider. 
Latest Android app for that works like expected, but latest iOS app doesn’t and I suppose it’s a bug. 
@Corry P or another mod… can you confirm if it’s a known issue? 
 

Using volume slider for a single room or main slider for a group of rooms doesn’t work. Just using the room slider of a room that is part of a group will unmute this single room. 
On Android it works in any case. 
 

Here‘s a video of my iOS app (latest version) on iPhone 14 (latest iOS version). 
Using iPad 10 it’s exactly the same.

On my system I’ve always had to “tap to unmute” - the volume setting could be changed with the slider, but the speaker remained muted until the tap.

Using iOS app? 
With latest Android app it definitely behaves completely different. 
And as said iOS app imo should work the same. Besides it’s inconsistent behavior as you can unmute a single room of a group by using its dedicated volume slider. 
 

I could live with both… unmute by slider or mute icon or unmute only by icon. 
But it should be the same for all Sonos controllers.

To be honest I can’t remember how it was before with old s2 app. But I think now it should work the same way with each controller.
