While using the app on my Android phone, when I get an incoming call I no longer have access to the app in order to mute or turn down the music until I answer the call, and ask them wait a minute until I navigate back to the app to turn down the music. Is there a way around this? For instance, an (always on top) set of controls, or a setting to auto mute during incoming calls, or something like that.

That would be one answer, yes.
Another would be voice control - for example, if had loud music playing when I got a phone call, I’d ask Alexa or Sonos Voice Control to lower the volume or stop playback before answering the call. Even if the speaker playing does not have voice control itself, a command to a device that does will have an effect. For example, if I only have one speaker playing music, when I ask Sonos Voice Control to stop playback, I don’t need to specify on which speaker I’d like the playback to stop. This means there’s no panic as I try to remember what the room is called as the music plays and phone rings (and fluster-level increases).
I see only one of your speakers has this voice functionality, however, so this would only work within hearing range of that product.
I’d also likely just use the touch controls on the speaker if I was nearby, but I guess that goes without saying.
It’s possible that there is also an IFTTT (IF This Then That - SmartHome automation software) solution, but this would be unsupported by Sonos.
As I understand it, the notification bar that used to provide playback controls should be returning with alarm snooze functionality - that would be a quick way of accessing controls before answering the call, but is not available at present.

A supported plugin and go SmartHome option would be the Ikea hub and sound remotes?
If just used for speaker control and not integrated with lighting or blinds it could be considered a bit expensive. I have the previous hub and use the Ikea sound remotes with all my Sonos speakers, not just the Ikea Symfonisk.
