I have a custom service to connect to a remote subsonic server, per the instructions on subsonic’s website
The remote server moved and I need to update the address in the Sonos service. I can’t for the life of me find a way to edit the service, other than deleting it and recreating. Seems absurd there wouldn’t be a way to edit settings, is this hidden somewhere?

No, you cannot edit “customsd” services, delete and re-add is the only way. This is not an end-user feature, its for developers, so remains primitive.
