I am not able to choose a Plex Playlist in the Alarm Function.

Is it because it doesn’t show up in the picker list, or that you have set it and it fails to play when the alarm goes off?

That is 100% on Plex then, music services declare whether they are alarm-capable, and can also tag every item as to whether it can be used as an alarm. Ask Plex why they have disabled the alarm capability.
