When trying to delete a Sonos Music Library song or album from the shared folder on my PC so they no longer appear in my Music Library and are no longer on my hard drive, which related files do I delete? I would guess I need to delete the flac, jpg, log and cue files. Is that correct? And to delete an entire album, do I just delete all the files related to all the songs in that album?

I suspect you just need to delete the flac file, without that, the rest won’t mean anything to Sonos. But delete them too, just to remove them and clean up disk space (albeit not much, but still, no need for them.).
Just remember to update your music library (the process in the Sonos controller) once you’ve deleted them, otherwise they’ll show up until that process is run.
