How do I control my Sonos from

a remote location? My Sonos is set up on WiFi

You can log into your system using the web interface at https://play.sonos.com/en-us/households

Obviously, the Move 2 would have to be powered on to be accessible.

Hi. I’m not sure to understand what do you want. The options to control Move2 are:

Sonos app. Move2 and mobile must be in the same WiFi network. Control via app.
AirPlay (Apple): Both devices should be also in the same net, in this case you can use the mobile to control the music, even when it’s locked.
Bluetooth: not need a WiFi connection but directly from mobile to the Move2. Same controls than with AirPlay.

Edit: and as @Mr. T says, the web is the way to control the system without the need to be colose to your speakers.
