It couldn't be simpler. Settings/Room Settings//Room Name. The cursor is already in the name field. Backspace or delete the contents, then type a new name.
What am i missing?

Try checking for updates. You may need to update the Sonos hardware, because there could be a mismatch between the app and hardware versions.
