What’s the latest on any support (official or otherwise) for playback of music mixed in 5.1 via .m4a files?

I have tried copying some of the content to my Sonos library and then tried a library update, but it still doesn’t show up.

Am I out of luck?

Sonos supports the following audio formats when streaming from your local music library. Sonos systems support mono (1-channel) or stereo (2-channel) audio files with sample rates up to 48kHz.

Any outside apps that I can play on Sonos?  Via either Plex or an Apple TV, perhaps?

I imagine any apps that play through a TV can play a multi-channel source to a Sonos Home Theater system.  No direct streaming, but it will play them through HDMI-ARC via the TV.
