When adding new sub-folders to the main folder in Music Library, is there a way to rescan the folder so that the new sub-folders are added?
Or..
Is the solution to delete the folder then add the folder after adding the new sub-folders?

A scan should walk the entire directory tree, so simply running an update ought to detect any new subfolders. Is the update not finding the additions?
In answer to your second point, removing the share from Sonos and re-adding it will force a full rescan.
