I have a Sonos Five, Beam, and Symfonisk satellites in my living room. The Five is purely there to connect my turntable, so I do not want it to play when the TV is being used. Is there a way to accomplish this without having to manually toggle speakers every time we switch from the turntable to the TV?

It sounds like you needn’t group at all.
On the Beam use TV Autoplay and Ungroup on Autoplay.
On the Five configure Line-In Autoplay to play to Beam or Five.
