Can I use Sonos Connect to use with my old HiFi Stereo Amplifier & pair of speakers without using any other Sonos Speakers ?

Yes, think of the Connect as a tape-deck, ideally it hooks to your tape-monitor jacks, if you don't have them then hook the Connect output to an Aux or CD input on your old gear.
