As the title said, can I set up two 3’rd party speakers and a Sonos Sub using the Ethernet connection, but not activating SonosNet?

No, there’s no option to turn off SonosNet.

And, I completely misread your post, my apologies.

The Sonos sub can not be set up as a separate device. It is required to be bonded to an already existing, and capable, Sonos speaker. It can not be ‘stand alone’.

And I’m still not sure I’ve answered your question.
