Can I pair all the speakers in all of my zones to a single Amp?

Not sure what you mean by ‘pair’. In general, a Sonos Amp can power two pairs of 8 Ohm speakers, although there are other special cases. You can always group any number of Sonos devices, up to the limit of 32.

not pair but group them to play together   they each have wifi radios that can play independently ( in other rooms with different music )
