When streaming audio from a browser using iPhone and airplay (primarily referring to YouTube), the audio stops if the browser is minimized or phone is locked. Are there settings that can be changed in iPhone or Sonos to prevent this?

This sure sounds like an Apple issue, Sonos is merely a receiver of the signal. Have you checked with Apple?
