So I have the new sky glass, only problem this doesn't have a optical output. Is there anyway to convert HDMI to optical?

Yes, this one should work. Just watch out for audio delays like @jgatie mentioned above.

Connect the Playbar and TV to the device like this:

You should be able to use an audio extractor/converter like this:

What Sonos device are you connecting it to?

Then any audio extractor will work, like the one listed above.  Just make sure to check if it adds any delays.
