I’m planning to purchase 3 pairs of Sonos 8 inch In-Ceiling Speakers (INCL8WW1).

Can it be powered by one Sonos AMP or do I need more to use the speakers upto full capacity?

One AMP can power the three sets of speakers. All speakers will play the same program at the same acoustic output. Depending on the room size and different rugs, drapes, windows, etc., room Volume will vary.
