I have just sold my Sonos arc and want to by another sonos Soundbar later. Can I still use my Sub with my Play 5 or my Symfonisk speakers from Ikea?

In short yes.

However, if you never removed the Sub from being bonded with the Arc, then you may have to factory reset it and add it back to the system.

But if the Sub already shows as unassigned in the app, then you can just go to either the room with the Play:5 or the Symfonisk speakers and select Connect Sub.

And, it depends on which version of the Sonos Sub you have. Note the restrictions listed in the Sub’s FAQ.
