I’m looking to get a Sonos AMP with 4 x Monitor Audio C280 IDC (specs below).
Would this pairing be okay if I wired them in parallel?

No. Unless you wire in some sort of impedance matching, two pairs of 6 Ohms means 3 Ohms total per channel, which is less that the minimum 4.
