I have the 2 Sonos S2 speakers and I don’t know how to connect my iPod touch as well as my very old Classic iPod. Could someone please help me with this?

Hi

If your iPod Touch is AirPlay2 capable you can send music to your Sonos One. iPod Classic is not AirPlay 2 capable. See below how to make your iPod Classic Bluetooth (BT) capable (maybe ???)

Click here to make iPod Classic BT ready (Good luck  )

If BT works for the iPod Classic it might be recognized by the Move or Roam. That’s assuming they (Move/Roam) are backward compatible to the iPad Classic BT codec. The Roam can act as a BT gateway to the Sonos One.
