If I pair 2 Sonos Moves into stereo, can I group that pairing with another Sonos (mono) speaker outdoors so that all three play at once, with 2 of them in stereo and the third not?

In Sonos parlance, you would ‘group’ one room with the other, and yes, the result would be what you suggest.

Each mono speaker, pair, or surround system becomes a “Room”. You can “Group” Rooms to play the same music. Note that when playing TV audio in a surround Room, any Rooms Grouped with the TV sound will be slightly delayed relative to the TV audio.
