is wiring surround sound different than mono ?

I would like to set up surround sound as well as full mono for music with an existing setup if possible. I have hardwired with 12/4 gauge wire at the four corners of a rectangular pool with rock speakers  from Niles Audio Rs8si (now known as proficient audio). I have two amps and a Sonos arc (arc used as center) at the small end of pool on porch.
 

is it possible to switch back and forth from surround sound and then mono and or stereo mode for music. 
 

other than red black wiring only is there a better way to wire up?  
when I called Proficient/Niles the senior service engineer t sent me a mapping of the wires to allow for greater dispersion with surround. but not sure if it’s compatible with Sonos amp
 

My installer says I had to choose between mono and surround

Your installer is correct.  There is no easy way to toggle between surrounds and stereo, never mind surround and mono.  Also, the Arc cannot be a center speaker.  Like all soundbars, the Arc already contains the front left/center/right speakers, and there is no way to add external front left/right speakers to the Arc.
