In the last month my Sonos system has turned on in the middle of the night both at my house and my condo (with nobody home). What the heck is happening. I don’t have Spotify I only use Apple Music.

(I assume “turned on” means “played some music”). What exactly does it play? Next time it happens gather a Diagnostic code and ask Sonos support to tell you why.
