Can I use my Sonos speakers to be used instead of the TV speakers and /or to not use themat all with the TV? IE: Can I set them up to be chosen as the go to speakers or not?

Depends on which Sonos speakers you’re talking about. Sonos makes three things that are designed to connect to a TV’s ARC port, the Sonos Amp, the Sonos Beam, and the Sonos Arc.
There are other ways to connect, specially from an Apple TV to AirPlay 2 speakers, but this is not designed for use, carries only a stereo signal, and has no guaranty of lipsync.
