I am considering the Sonos Connect Amp. How I see the speaker connections include left, right and sub. Can you configure it so that it has front, center, and back channels? If so, how do you do this?

No.

The CONNECT:AMP can be used to power rear speakers when connected to a PLAYBAR / PLAYBASE with an ethernet cord, see the FAQ here: Setting up CONNECT:AMP as surround speakers

There is no function to set up any Sonos speakers as Front Left, Front Center, and Front Right, unless you want to set up 3 CONNECTS hooked to an A/V receiver to push the signal to each, a very expensive solution. The Sonos solution (the PLAYBAR or PLAYBASE) is a bar that includes all 3 front speakers in a single bar. These two devices are the only ones that Sonos has that can interpret a Dolby Digital signal
