I’m having a similar (perhaps the same) issue, and I believe it was following software updates to both Sonos and my Apple TV. (Not sure how relevant the AppleTV update is, but it was performed.) I’ve used the “input change and volume down button” reset procedure a couple of times in the past, but under this new scenario, I’ve done that at least six times (probably more) with no success. Tonight I factory reset my entire Sonos system and reconfigured it, but again, no success. As things stand right now, the only way I can control the volume for my TV (playing through the Sonos Sound Bar) is to use the Sonos app on my phone or iPad, and adjust the volume there.
Anybody having similar issues, or have any other suggestions for a solution?

Mine played up a few days ago and used the second part. Changing from HDMI to IR fixed it.

Go to Settings on your Apple TV.

Select Remotes and Devices, then select Volume Control.

Select a different volume control setting and try your volume buttons again. For example, you can select TV via IR instead of Auto.

I had the same trouble with my LG TV. Solved the problem by disconnecting the AppleTV from the TV and pairing the Playbar to the TV (from TV). Reconnected the AppleTV and it worked!
I tried TV via IR and it didn’t change anything.
What did Sonos Support suggest, when you called in?
I’m also curious, since you took the step of resetting the Sonos, did you unplug your TV from the wall for two minutes, and after plugging it back in, check it for updates from LG?
LG has an option in settings to pair a TV. It won’t work with the HDMI cable from AppleTV plugged into the TV set. Once I disconnected the cable between AppleTV box and the LG I was able to pair the LG to the Sonos sound bar, reconnected the AppleTV and all was good.
