I can’t seem to find anyway to rename my rooms using Sonos controller on Windows 10. I’ve read that it’s possible through the mobile app, but surely if the little mobile app can do it so can the full desktop controller app can too? This needs asked again and again because it’s ridiculous if it’s not possible.

You are correct, the PC and Mac app do have limited functionality compared to the mobile app.
In fact the mobile app is the “full” app with all the functions, compared to the limited functions of the PC and Mac app:
