I have two Play:5 gen1 speaker. If I get a Sonos One SL, can I group the Five gen1’s to the One SL and use Airplay through the One SL? If yes, is it possible to configure the two Five gen1’s as a stereo pair, and leave the One SL as a single speaker?

Yes and yes, BUT you need to get a One (or any other AirPlay and S1 compatible Sonos speaker) instead of a One SL. The new One SLs are only compatible with the S2 app.

AirPlay with Sonos:

When an AirPlay compatible Sonos product is playing AirPlay audio, you can group it with any other Sonos product in your system for multi-room playback.

You can also group any other Sonos speaker with an AirPlay 2 compatible Sonos speaker for multi-room playback. If you’d like your non-AirPlay compatible products to stay grouped together with other products when you start playing AirPlay audio, go to the Settings tab in the Sonos app for iOS or Android, tap System > AirPlay, then enable Group Non-AirPlay Products.
