What is the difference between sonos one and sonos one SL

The Sonos One SL doesn’t have a mic for voice control.

(Actually it doesn’t.  I just made this up)

Even though it’s not true, it could serve as an “aide mémoire”.  Or as you say in France, a “memory aid”.

Also, (another minor difference) that may add a ‘slight’ complication for a very few users…

A Sonos One can be used on both an S1/S2 Sonos system, whereas a new Sonos One-SL (or a used Sonos One-SL previously used on an S2 system) cannot be used on an S1 Sonos system. The SL is basically S2 only, unless registered pre-March 2021 and just run on an S1 system only.
