I have a small bar 1,500sf, with 14ft ceilings, and my electrician is suggesting I use Sonos rather than hard wiring speakers etc...Would the system provide sufficient sound quality and disbursement once the bar is full and the volume cranked? I'm not familiar with the system but he suggests the 5's, I'm more inclined to go with the hard wired system as its tried and tested, but any feedback would be great.

Play:5s put out an enormous amount of sound for their size. However, they are not meant to be a club type sound system or PA. If you are just looking for music in a bar, they would be fine. If you are looking to pump rap/dance music or rock the house, then I would stick with the traditional.

A Connect feeding a multi-speaker mono amplifier that meets your sound level needs would be the way I'd go.

Not sure how happy the 5s would be in a smoky bar environment either.
