My set up is quite old but still going strong - two rear Play 1’s, a Playbar and my newest addition, a mini sub.
My question is, can I add two speakers to my set up that would add to my surround sound and also work with a bluetooth turntable (Pro Ject T1 EVO BT)

You can only have two rear speakers bonded to a Sonos soundbar. Adding two more speakers will not work.
Not knowing what turntable you are referring to there is a way to send Bluetooth audio to an Era 100 but it’s not the best solution. In fact I wouldn’t recommend it.
The best (recommended) way to send audio from a turntable is via a line-in connection to an Era 100, Era 30O or Five as a single speaker or stereo pair. You might also consider a Sonos Port to direct the audio to your Playbar that will allow the use of all speakers in that setup.

Not a huge fan of the compression built in to Bluetooth, either. It’s fine for my car, with additional sound coming from various sources, but I wouldn’t use it for critical (vinyl) listening. Although I’d be tempted to go either the more inexpensive Roam (gen 2), with the Sonos adapter, and then group it with with the ancient (relatively) PLAYBAR and PLAY:1 surrounds room. You would likely want to set that room to ‘Full’ rather than ‘Ambient’ in the room settings for the surrounds, though, just so they give you full stereo output.
Alternately, you could just get another pair of speakers, and set them up as a second ‘room’ (all of this is assuming you’re running S2 on that PLAYBAR, which I think it must be, if you’re using a Sub Mini), and use that ‘room’ for the turntable, and not include grouping the PLAYBAR’s room, as you desire.
If you’ve not yet bought the turntable, I believe that there are wifi turntables that could send straight to your existing system without the need for more speakers - unless you also want more speakers!
Even if you want more speakers something like the Victrola Stream line ofdirect connecting turntables are nice.
Second choice would be an analog connection to a new speaker. Fives are the best stereo option, 300s do good stereo plus excellent Atmos, 100s do good stereo. Haven't tried Move or Roam but I'm impressed by my Play.
Not on my list is Bluetooth, just not a good option, convienet yes, good nope. Save Bluetooth for portable use.
I was waiting for my turntable from Richer Sounds, it is due in shortly, so I’ve rang and cancelled my order.
I found a new, open box Victrola Carbon turntable for almost £300 off retail so I bought that. Just need to wait for delivery.
Also a mention that I have a stereo pair of Roams that I’ve just discovered you can group to your other speakers (Playbar, 1’s, Sub) and it’s quite a nice sound.
