Your question is not very clear. Can you explain a bit more clearly: are you trying to stop group play? What are you trying to shut down? What do you mean “remove music”? What “it” would acknowledge - a voice control system? Which one?
By hitting Stop?
I open the app… select which speakers I want it to play on. When I am done listening … closing the app does not shut off music. Unselecting every speaker … used to say… no speakers selected this will close the app. New update does not do that.

That is as designed. Sonos is meant to play even if you close out the app because the app is just a controller, it doesn’t play anything, the Sonos hardware does. If you want to stop the music, just press the Stop/Pause button in the app. Easy peezy.
You’re using the Sonos app, correct? Or are you casting/airplay from a music service app to Sonos speakers?
You just need to press pause when you’re done. You don’t need to go through the lengthy process of removing any music from speakers. Pressing pause stops the music just as fully as switching the speakers off at the wall.
