I have a Yamaha RX 700 Aventage receiver. I would like to use two wireless speakers on the rear surround speakers. Can this be done?

Not with Sonos speakers. They wouldn’t work with your existing receiver.
No, it is not possible. Sonos surrounds can only be added to a Sonos Amp or an Arc/Beam/Ray soundbar.
