Is it possible to use the new SONOS Era 100 or Era 300 speakers as audio output for a Mac, using only a direct USB-C to USB-C cable, without the SONOS audio adapter, selecting the necessary audio output in System Settings.
Should this work?

No, this will not work.
In this thread the SONOS staff is not so sure.
I know for a fact it will not work. I am unsure as to whether it would be physically possible to implement at a later date, but suspect not.
