Is there a simple way to pair my Sonos speakers with my iPhone? Reviews of the apps indicate difficulty, costs and primitive development.

I don't understand. You never could have set up your Sonos system without downloading and connecting the Sonos app.
I’m wondering if the OP means using Bluetooth, or even AirPlay 2? Either of those would send a stereo signal to the Beam, not a 5.1 signal.
Just a thought, but if the OP has an Apple TV connected to his TV, they could use AirPlay 2 from the iPhone to the Apple TV, which would ‘get’ a 5.1 signal, and then pass it on to the Beam, sub, and surrounds….if the original signal was in 5.1. If the original signal is stereo, then the Apple TV will still send that stereo signal to the TV, which will pass it to the Beam.
