I have a great Sonos system built for music across my house. 2 current gen Five’s and 2 Era 300’s. I know I can line-in a CD player into one of the Five’s. Can I then connect them like normal and have the line-in streamed around the house like I do with my streaming services?

Yes, just choose the Line-In option under the Browse tab in the Sonos app.
