Probably elementary, but I’m from the vinyl age. I’ve set up a pair of Roam2 for use with my home Sonos system. If I take them when I travel and connect them with another device, will I then have to set them up again for my home system when I return.

No, it should reconnect with your system at home as soon as it is within range.
If your Sonos are ‘out’ for any length of time, it would be valuable to check them for updates when you return them to WiFi connectivity. Only takes a moment, and ensures all speakers are running on compatible firmware.
