I have an Audio-Technica At-LP60X-GM turntable connected to a Move 2 via a line-in adapter. My system includes an Arc, Sub, 2 Ones, and a Move 2. Are there any reasonably priced solutions to listen through my Sony WH-1000XM3 headphones?

There are no devices that Sonos makes that generate a Bluetooth signal, although some of them can receive one.
If these Sony headphones are Bluetooth receivers, you’d need to connect them to the Bluetooth originating device, and not the Sonos.
You could split the line-in, after the phono preamp, with a simple Y cable.
Then get any Bluetooth transmitter that is compatible with the headphones
