Recently I have noticed, that using my Sonos Arc, Sub and Play 1 in Surround setup causes music to be “pulsing”, when the source is Dolby 5.1 (older movies). The problem doesn’t happen on Dolby Atmos.

As it’s working okay for Dolby Atmos - I guess it is likely something connected with the audio source. Perhaps first try power-cycling the TV, A/V products and all the Sonos products involved and maybe reseat (or replace) any cables in-between the audio source and the Arc and just see if that resolves the issue.
If the issue persists, it might be helpful to report back here and to state the make/model of the TV and mention any audio settings, including details about any other products/Apps that are involved in the setup that gives rise to the issue.
